To begin, if you do not have an Instant Pot, get one! Black Friday is approaching…I got mine on sale last year! It’s life-changing! Don’t let the fact that it’s a pressure cooker scare you. It’s super simple to use and saves SO MUCH TIME! I make some part of almost every meal in mine!

I love Fall! The weather here has been nothing but cold and wet these days, so…I needed some comfort food. Plus, I wanted to try out some ideas for Thanksgiving dinner. This one is a winner! I love mixing pork with fruit flavors. They really compliment the pork. My mom ALWAYS served applesauce with our pork dinners. If you don’t, try it, Mmm!

Ingredients

  • 1 1/2 Pound
    Pork Loin - frozen
  • 1 Teaspoon
    Garlic Powder
  • 1 Teaspoon
    Onion Powder
  • 1 Teaspoon
Salt (I use Himalayan Pink Salt)
  • 1 Teaspoon
    Ground Black Pepper
  • 1 Teaspoon
    Oregano
  • 1/2 Teaspoon
    Cayenne Pepper (optional)
  • 5-6 Slices
Apple - Any Variety - I used Granny Smith
  • 1/2 Cup
    Apple Cider
  • 1/2 Cup
    Water

Instructions

  1. Mix all of your spices together and evenly cover the sides of your pork loin.

  2. Place the roast inside your Instant Pot and set to Sauté Mode on medium heat. Sear your roast for a minute on all four sides.

  3. After searing, add your water, cider, and apple slices to the pot. Attach the lid, turn the valve to "sealing", and set to 50 minutes on High Pressure.

  4. Once the timer goes off, do a quick release.

    ...and your roast is done!

P.S. Don't throw out that cooking liquid!

  5. Don't stop there! Complete your roast with my Apple Bacon Compote and Apple Cider Gravy.
