Instant Pot Meatloaf & Mashed Potatoes (Gluten & Dairy Free options)

Who doesn’t love those one pot meals? This meal is all cooked at the same time in your Instant Pot! That’s right, no oven and no big boiling pot of water for those potatoes. It does use more than one dish, but the fact that you can make these two dishes at the exact same time, in the same pot, is mind-blowing to me! It just doesn’t get any easier!

For this recipe, I made four personal sized versions of my Mom’s Traditional Meatloaf. I used quality grass-fed and finished beef, which, in my opinion, adds so much good flavor to your meal. If you’ve never tried it, do yourself a favor and go get some! It’s not just a fancy title slapped on ground meat. Not only is it better for you, it’s much more delicious! My favorite is Strauss Ground Beef. Check out their website straussbrands.com to find it nearest you.

You can substitute your favorite meatloaf recipe (1lb ground meat recipe) in place of this, though. You can also opt to make one meatloaf, instead of four personal ones. The cooking time may need to be extended 10 minutes or so depending on the size dish that you use. Just keep that in mind!

  1. Follow the recipe for my Mom's Traditional Meatloaf and combine ingredients in a bowl.
  2. Separate meatloaf mixture into 4 small loaf pans (I just used the disposable ones) or in one glass dish that fits inside your IP. They even have silicone baking dishes on Amazon. Just note, if using one dish, you'll have to increase the cooking time for 10-15 more minutes, depending on the thickness of your meatloaf.
  3. To your Instant Pot, add the diced potatoes and water.
  4. Lay your trivet directly on top of the potatoes, and layer the four loaf pans on top of the trivet.
  5. If they stack up too high (i.e. they go above the "Max" line on the inside of the pot), remove some of the potatoes from the bottom, replace the four pans, and add the potatoes around the edges of the loaf pans.
  6. Attach the lid on top of your IP and seal the valve.
  7. Press the Meat/Stew button (Or Manual - it doesn't really matter), press "Adjust" until the pressure is set to "More," and set the cooking time for 35 minutes. The IP should take about 10 minutes to come to pressure.
  8. When the timer goes off, do a QR (quick release) and remove the lid.
  9. Remove the meatloaf pans and drain excess fat off of each.
  10. Remove the trivet and drain the water from potatoes.
  11. Optional: Your meatloaf doesn't look the prettiest at this point, and doesn't have any bit of a crust. This step helps that, but is totally optional! Place meatloaf pans on a baking sheet under the broiler on Lo for 3-4 minutes to crisp up the top layer.
  12. To the warm potatoes, add remaining ingredients: butter, yogurt/sour cream, nutpods/milk, salt, garlic powder, and pepper. I like slightly clumpy potatoes, so I just use a wooden spoon to gently mash them. If you don't like any clumps, use a handheld mixer to whip them up - all right in the same pot!
  13. Serve on their own or with your favorite gravy! Despite my LOVE for gravy, I find that these potatoes need absolutely nothing more. They're rich and delicious on their own.

Cookie Butter (Dairy-free/Gluten-free)

Who else is obsessed with all things cookie butter? I’ve always been a huge lover of the speculoos cookies. They have the perfect crunch along with having a great balance of sweet and spicy. What’s not to love?! When I realized that there was a butter with all of those same flavors. I WAS DONE. GAME OVER. GIVE ME ALL OF THE JARS. The flavors and spices involved just scream comfort and holidays to me! There just isn’t anything better!

The cookie butter that I used to know and love was far from paleo. Therefore, I set out to make a healthier version of this creamy spread, and I’m pretty sure…I accomplished just that. This turned out ridiculously delicious. Thankfully, Simple Mills makes a Cinnamon Cookie that has just the right texture for this task! Stay tuned, if you can’t find these cookies. I’m going to try to come up with a recipe that doesn’t involve this particular brand, as some of you may not be able to get your hands on them. Sad day!

Breaded Chicken Cutlets/Tenders (Gluten/Grain Free)

Chicken tenders…for kids young and old! They just never get old! These cutlets are wonderful served over creamy pasta, cauliflower rice and gravy, or make them into tenders and dip them in some good ol’ RANCH! You can’t go wrong. Totally kid-approved!

These are made with a combination of gluten free flours and spices that make the crust, crispy and flavorful! Don’t let fried chicken intimidate you. These are a great way to try it out! They’re super simple to bread and fry – you’ll impress yourself! 😉

  1. In a medium sized bowl (big enough to toss chicken pieces in), beat the egg and water. Set aside.
  2. In a shallow bowl or plate, add 1/4 cup of arrowroot powder.
  3. In a large bowl, mix together remaining ingredients (except for the chicken breasts).
  4. On a cutting board, slice each chicken breast into 2-3 thin slices. (about 1/4-1/2 inch thick) You do this by placing the chicken breast, flat on the board, and laying your hand on top. Hold your knife sideway (parallel to your hand and the board), and cut into the breast. Eyeball it and cut 1/4 inch above the cutting board, leaving a thin chicken slice. I typically can do this 1-2 more times with each breast. It just depends on the thickness.
  5. You can also make tenders, by simply cutting the breast into long chunks. Cooking times may vary with the thickness of the chicken pieces.
  6. In a large, deep cast iron skillet (you could use a good, nonstick or heavy bottom pan/pot), heat oil over medium high heat. (it should take about 4-5 minutes to heat up)
  7. Dip each piece of chicken in arrowroot powder, being sure to evenly coat all sides. Use a fork or your fingers! You might get a little messy! (It's worth it though!)
  8. Follow by dipping each piece of chicken into egg mixture.
  9. Finally, coat all sides of each piece with the seasoned flour mixture, being sure to pat the mixture onto the chicken.
  10. Gently shake off excess flour and place each chicken cutlet into hot oil. Make sure it sizzles when you place it in there. That helps to get a nice crust on the chicken! (Do not over crowd the pan. I usually fit about 3 pieces at a time.)
  11. Cook for 4-5 minutes or until the edges begin to turn golden brown and flip. You should easily be able to flip the chicken when it's done on the first side. If it sticks, do not flip, and cook for another minute or so.
  12. Cook the chicken pieces for 3-4 min on the other side. The thinner you slice the chicken, the quicker it will cook! Usually, when both sides are evenly browned, it's done.
  13. Repeat steps 7-12 until all of the chicken is cooked.
  14. I like to keep the chicken cutlets/tender warm by placing them on a baking rack on top of a baking sheet in a 250 degree oven. It keeps them nice and crispy until you're done cooking them all!
  15. Serve over pasta or rice, or with some Ranch or BBQ sauce! 🙂

“Everything” Roasted Almonds

I’m always trying to figure out different healthy snack foods for my husband to either take to work or things that he can snack on around the house when I’m not around. No one likes a HANGRY person. I have a few different roasted almond recipes, but I think these are my favorite!

This recipe uses my “Everything” Seasoning. It goes great on so many things! Potatoes, avocados, eggs…the list goes on and on! There’s something so delicious about that poppy seed, onion, and garlic combo! You may want to portion these almonds out so you’re limited! It’s easy to eat the entire batch!

  1. Preheat oven to 250 degrees.
  2. In a large bowl, whisk together egg whites, water, and seasoning until the egg whites start to get a little foamy.
  3. Add almonds and toss to coat evenly.
  4. Spread out almonds on a baking sheet lined with parchment paper. This makes for easy clean up!
  5. Bake almonds for 30 minutes.
  6. After 30 minutes, flip and break apart any almonds that are stuck together and bake for another 30 minutes.
  7. After an hour, remove almonds from oven.
  8. Allow almonds to cool and store in an airtight container.

  1. In a deep, sauce pan over medium heat, add 1 tsp of ghee/oil and chopped green onions. Saute for 5 minutes or until soft. Set aside to cool.
  2. In the same pan, over medium heat, add all of BBQ sauce ingredients and bring to a simmer. Cook for 5-8 minutes or until sauce has reduced slightly. Reduce the heat to low and cover while you prepare the meatballs.
  3. In a bowl, mix together the remaining meatball ingredients along with the cooled green onions.
  4. To the BBQ sauce, drop 2 tbsp size balls into the mixture until one layer has formed. It's ok if the meatballs are touching slightly, just DO NOT overcrowd the pan or try to stir them around just yet.
  5. Increase heat to medium, cover, cook for 3-5 minutes.
  6. Remove cover and shake the pan slightly. Gently flip each meatball. If you find that you do not have enough liquid in the pan, feel free to add about 3-4 tbsp of water.
  7. On top of the first layer of meatballs, add another layer of the meat mixture, in 2 tbsp size balls. Cover and cook for another 10 minutes - shaking the pan every few minutes to slightly move the meatballs around. Repeat until you have used up all of the meat.
  8. After 10 minutes, uncover the pan and gently flip the meatballs around, moving the ones from the bottom to the top. Reduce heat to low, cover, and let simmer for another 5-10 minutes or until you're ready to serve!
  9. Serve these on top of cauliflower rice or as bite-sized appetizers!

Low Carb Pizza Cups (Dairy Free)

I’d say that 99% of the population loves pizza! …including pizza-inspired dishes! These Pizza Cups will be no exception! I used italian sausage for mine and drizzled them with my Garlic Basil “Parmesan” Sauce, but feel free to use your imagination and mix in any toppings that you’d typically get on a pizza! Onions, green peppers, italian beef, pepperoni, mushrooms, bacon…the list goes on and on! Make plenty of these, they disappear quickly! They’re a perfect 2 (maybe 3) bite finger food for a party! Everyone will be grabbing these up.

The crust is made with cauliflower rice so it has much fewer carbs than the normal pizza crust one would serve. You can feel good about eating this pizza! 😉

  1. Preheat oven to 425 degrees.
  2. In a bowl, combine all of the crust ingredients until everything is mixed up well.
  3. Separate crust mixture into the openings of a greased cupcake pan. This recipe should make about 12.
  4. Press mixture down into the bottom and slightly up the sides of each cup.
  5. Bake for 10-12 minutes or until the edges start to turn golden.
  6. While the cups are baking, crumble and brown the italian sausage in a saucepan over medium heat.
  7. Once the sausage has all browned, add the remaining ingredients for the filling. Start with 1 tsp of salt and add more as desired. Feel free to add more/less fresh basil or even some oregano! The fresh herbs really add to the sauce!
  8. Remove crust cups from the oven and filling each one with about 3 tbsp of filling. If you can tolerate dairy, sprinkle some raw grass fed cheddar on top!
  9. Return cups to oven and cook for another 5-8 minutes.
  10. Remove cups from pan and DIG IN! Drizzle with my Garlic Basil "Parmesan" sauce for extra goodness!!!

Paleo Buffalo Chicken Cups

Buffalo flavored foods go hand and hand with sporting events, parties, and appetizers, in general. I love it! It’s the main reason I’m always ok with Super Bowl parties! 😉 I’m really there for the food and commercials, anyways! These Buffalo Chicken Cups are a great addition to your menu for the big game!

Speaking of buffalo flavored things, I make a few casseroles that are buffalo-inspired too! The possibilities are endless with that hot sauce. Check out my Buffalo Chicken Casserole recipe! It’s low carb, super tasty, and easy to throw together on a weeknight! Who doesn’t love a casserole?

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine all of the crust ingredients.
  3. In a separate bowl, combine shredded chicken and the remaining ingredients for the filling.
  4. In a greased cupcake pan, drop 2-3 tbsp of crust batter into each opening. Press the batter up around edges to create a little cup. It should make about 14 cups.
  5. Add 2-3 tbsp of the buffalo chicken filling to each cup.
  6. Bake cups for 18-20 minutes or until the center of the crusts are done. You can check this by inserting a toothpick in the center. If it comes out clean, it's done!
  7. After they have baked for about 20 minutes, remove the cups from the cupcake pan and ENJOY! I like to serve these with homemade ranch!
  8. Optional step for extra crispiness: Preheat oven to 450 degrees. Transfer cups to a baking sheet and bake for 5 minutes until desired crispiness is reached!

I cook mine while I prep and cook the rest of the recipe. I use my Instant Pot! I set it for 25 minutes and two large chicken breasts are perfectly shreddable after that time. SUPER EASY!

4-Ingredient Chicken & Noodles (Dairy-free)

Chicken & Noodles is a total comfort food for many people … especially my husband. It’s simple and so yummy! Canned condensed cream of chicken soup used to be a staple in my kitchen. It was always a go to for so many dishes. However, that isn’t the case anymore. I’ve made it a goal to find healthy alternatives to things that we loved to eat! Chicken & Noodles, complete with that overly-processed condensed soup was one of them! I swear that my husband could live off of that and Beef Stroganoff. Even after finding a creamy alternative, it’s been a struggle finding a pasta that wasn’t packed with carbs yet still paleo. There’s a few delicious ones out there, but we keep those to a minimum. I recently stumbled upon a green bean pasta that has only 2 INGREDIENTS – green beans and water! This pasta is so good and packed with protein! It’s now on our dinner menu at least once a week!



I love simple, one-pot dishes! Who DOESN’T love simple tasty meals?! This dish tastes like it’s been cooking forever because of my favorite chicken bouillon paste…and, I promise, you won’t miss the dairy! This paste is liquid gold and goes into so many of my dishes! It’s organic and SO DANG TASTY! Make it a point to grab some the next time you’re at the grocery store!


 My Chicken & Noodles meal comes together so quick when you have a leftover rotisserie chicken! However, you are more than welcome to cook a couple chicken breasts or a few thighs, just for this dish! Alright, let’s get to this easy recipe!

  1. In a large pot, bring water to a rolling boil and add pasta. Cook until desired doneness. The pasta that I used cooks in about 4 minutes - it's awesome!
  2. Drain and add the pasta back to your pot.
  3. Add remaining ingredients to the pot and cook for another 10 minutes* over medium heat or until everything is heated through. Taste and add more salt if you'd like! The bouillon paste is usually plenty salty though!
  4. For extra creaminess, add a few tbsp of ghee or grass fed butter - that ALWAYS makes things even better, in my opinion! You can try mixing in some italian herbs or poultry seasonings too. Just be sure to add those in when you add the other ingredients!
  5. You can bulk up this meal buy adding some peas, carrots, or broccoli too! I love to steam a bag of broccoli in the microwave while I'm boiling the pasta and dump it in when I add my chicken. Super easy! It's super versatile and delicious so many different ways!
Recipe Notes

*Be advised, the longer you let this simmer, the more your noodles will cook. Therefore, if you let it simmer for a while on low after it's heated through, you may end up with more broken bits of noodles and a stickier consistency - still delicious. I honestly prefer things this way! haha - A mooshy mess! 🙂


Paleo Tortillas/Crepes

Since the first day I made these, my husband has been obsessed! He actually says that he likes them better than regular tortillas. I have to admit that they do NOT taste like corn or flour tortillas. I can’t fake that corn taste. NO CAN DO. They actually have a bit of an eggy flavor that we personally love!



The best part about these is that they are almost indestructible. haha! They don’t break when you fold them up. A broken taco is a quick way to ruin your meal. 🙁 These tortillas will never let you down in that department!

These shells can also double as crepes! Fill them with eggs and veggies or berries and some coconut whipped cream for a yummy breakfast!

  1. In a bowl, combine all of the ingredients. When making tortilla shells for tacos, I like to add garlic powder, onion powder, and cumin for extra flavor - totally optional!
  2. Over medium-heat, pour 2-3 tbsp (a little bit less than 1/4 cup) of batter in a small nonstick pan** and swirl around to form a circle.
  3. When the edges start to curl up slightly, its time to flip! This usually takes about 30-45 seconds. I like to use a silicone, heat-resistant spatula. I just lightly slide it around the edges to loosen. Because of the nonstick pan, you should be able to easily slide the spatula around and flip your tortilla effortlessly.
  4. Flip and cook the other side for another 30-45 seconds.
  5. Repeat steps 2-4 until you have used up all of your batter. This recipe typically makes about 8 tortillas - give or take. It just depends on how thick you make them!
Recipe Notes

*I would not substitute anything for the avocado oil. I have tried coconut oil and butter. However, when added to the cold eggs, it solidifies and doesn't cook evenly. Therefore, the recipe will yield some clumpier tortillas.

**I use a 6-inch pan. Make sure to use a non-stick one! It's essential!

Cinnamon Apple French Toast Bake with Maple Icing

I’m not usually a sweets-for-breakfast person…I almost always go for the biscuits and sausage gravy or meaty omelets. I do, however, enjoy a bite or two of pancakes along with those. I have a problem with wanting a bite of everything on the menu … every time – every meal. I just can’t help it!


Sometimes, a bunch of maple-y goodness sounds like the perfect way to start my day! Filled with sweet caramelized apples and tons of cinnamon, this french toast bake does not disappoint! It’s super moist consistency and eggy-french toast taste is sure to be the perfect, cozy and comforting breakfast any day of the year, but is particularly wonderful when it’s FREEZING – like it is in the Midwest right now!

This bake isn’t heavy on the carbs either … which is ALWAYS a plus when eating something bread-like and sweet! It only has about 10-15 carbs per serving, depending on if you top it with icing or not. Either way, it’s delicious and won’t make you regret eating it!

  1. Preheat oven to 350 degrees.
  2. In a cast iron skillet over medium high heat, sauté apples, ghee, honey, cinnamon (I used a full 2 tsp - use less depending on preference), nutmeg, and 1 tablespoon of avocado oil for about 3 minutes or until apples have soften and remove from heat.
  3. In a bowl, combine remaining ingredients (reserve the coconut butter and 2 tbsp of maple syrup for the drizzle) to create the batter.
  4. Pour batter over apples and sprinkle with a bit more cinnamon.
  5. Bake for 20 minutes or until it's cooked through in the middle.
For the icing:
  1. In a saucepan, melt coconut butter and maple syrup just until they combine. If it's too thick, feel free to add a bit more maple syrup to make it easier to drizzle.
  2. Drizzle over your warm french toast bake and DIG IN!

I feel like this bake only gets better with time. Everything with fruit and spices just gets more flavorful as it sits...so you may want to make plenty to have the next day too!
