Tzatziki Sauce (Dairy-free)

This sauce is pure deliciousness. It’s refreshing, creamy, and can double for a dressing or a dip! You can’t go wrong! It’s made with coconut milk, but I promise you, you’d never know it!

Ingredients

  • 1
    Large Cucumber - grated
  • 1/2
    Lemon - juiced
  • 4
    Large garlic cloves - minced (about 1 TBS)
  • 1
    13.5 oz can of Coconut Milk - unsweetened
  • 1 Teaspoon
    Onion Powder
  • 1 Teaspoon
    Salt (I use Himalayan Pink Salt)
  • 1-2 Tablespoon
    Dill
  • 1/4-1/2 Teaspoon
    Ground white pepper (you could sub. black pepper)

Instructions

  1. Grate your cucumber over a bowl. I don't like to drain the liquid off. I add every bit of it to the sauce!

  2. To a food processor, add the grated cucumber and remaining ingredients* and puree for a minute or until the sauce starts to get frothy.

    *Adjust the minced garlic and dill to your liking. I love dill so I tend to go heavy on it and add 2 full TBSP.

    Note: Using fresh garlic makes a HUGE difference. Don't be lazy. Buy the garlic cloves and chop them! If you are not a huge garlic fan, you can reduce the amount to a couple cloves. You can always add more if that isn't enough flavor! Feel free to add more than 4 cloves too! Proceed with caution though, fresh garlic adds a spicy bite to the sauce. Personally, I love it!

  3. And...you're done! It's so simple! You can use your sauce now, or let it set up some in the fridge. After an hour or two, it will thicken quite a bit! Either way, it tastes delicious!
