Fajita Taco Meat

On any given day, if you ask me if I want tacos or nachos, 9 times out of 10, I will say YES. This fajita-inspired, taco meat is perfectly seasoned with spices you probably already have in your cabinet. Therefore, no overly-salted, seasoning packet needed here! This meat combines all of the flavors of fajitas in an easy-to-cook, foolproof dish!

It goes great on tortillas or piled up on chips with tons of toppings…including my dairy free Pepperjack Cheese Sauce. I think I make a batch of that almost every week! Ready to dig in, yet? Here’s the recipe!

  1. In a nonstick sauce pan or cast iron skillet over medium heat, sauté peppers and onions in oil for 3-4 minutes or until they have just began to soften.
  2. Add your ground beef to the skillet and begin to break it up.
  3. Add all of your seasonings to the ground beef and continue to break it up while it cooks.
  4. After the beef has browned on all the edges, (this should take about 5 minutes), add the water.
  5. Reduce the heat to low and simmer for 5-10 minutes until most of the liquid has cooked away.
  6. And...you're done!
Recipe Notes

*If you are using the cheapest ground beef for this, depending on the brand, you will often find that the fat content is higher, therefore, there will be more grease. Depending on how much fat is left after browning, reduce the water to 1/4 cup, first and see if you need more liquid after that.

My ground beef ratio is usually 85% lean/15% fat and I never have to drain excess. Personally, it's worth the extra dollar or two to buy quality meat. Just keep that in mind!

Mexican Potato Bake

The only thing that I like just as much as Mexican food is potatoes. I like them in just about every form. This dish combines diced sweet potatoes, but you could substitute your favorite potato instead. Japanese sweet potatoes or red potatoes would be delicious!

With the addition of sweet peppers, chipotle peppers, ground beef, and mexican spices, you’ll whip up a casserole that’s spicy, addicting, and a nice change from typical mexican food.

…which is still absolutely delicious. Change is nice though!

I like to top mine with avocado and dairy-free cheese sauce. You could go crazy with so many different toppings for this! Sour cream, greek yogurt, green onions, salsa verde, the list goes on and on! It would all be tasty!

  1. Preheat oven to 400 degrees.
  2. In a large cast iron skillet (if you don't have a cast iron skillet, you can you a large soup pot or deep nonstick pan, and then transfer to a baking dish), sauté onion, peppers, and potato in oil for 5 minutes or until onions become translucent.
  3. Add ground beef to skillet and sauté 5 minutes while breaking the meat up.
  4. Stir in garlic and all of the seasonings to the ground beef and vegetable mixture and cook for another 1-2 minutes.
  5. Remove skillet from heat.
  6. In a large bowl, whisk together coconut milk and eggs.
  7. Add milk mixture to the ground beef and vegetables and combine.
  8. Transfer skillet to oven (or transfer to an oven safe baking dish first) and bake for 20 minutes.
  9. Cool for 5-10 minutes before cutting.
  10. Top with avocado, cheese sauce (see recipe note for my dairy free Pepperjack Cheese Sauce), green onions, salsa, or jalapeños before serving!

Instant Pot Chori Pollo Sopa (Chicken & Chorizo Soup)

Chori Pollo has been a mexican favorite of mine since the first time I had chorizo. I almost always choose chicken over beef or pork, however, the combination of chicken with the spicy sausage is perfection and I can’t pass it up!

This dish combines all of those flavors with one of my other favorite things – SOUP! It’s also made in the Instant Pot – yet, ANOTHER one of my loves. However, you can make it on your stove top or in your crockpot, as well. It’s will just take a little bit more time.

Instant Pot Chori Pollo Sopa (Chicken & Chorizo Soup)

  1. With your instant pot set to "Saute", cook onions, jalapeños, chorizo, and chicken pieces for 3-5 minutes or until onions have began to soften. TIP: Sautéing your food for a couple minutes in the beginning will help the pot come to pressure quicker.
  2. Add remaining ingredients to your Instant Pot and stir to combine. Hit the "Cancel" button to take it off of "Saute" mode.
  3. Attach the lid and turn your valve to seal. Press the "Soup" button, adjust the time to 15 minutes, and let it cook!
  4. When the timer goes off, turn the valve to vent, and do a QR.
  5. Serve with chopped green onions, sour cream, avocado slices or my Pepperjack Cheese Sauce (dairy free). See recipes notes for a link to the recipe!**
Stovetop Instructions:
  1. In a large soup pot over medium heat, sauté onions and jalapeños for 5-8 minutes until the onions have become translucent.
  2. Add sausage and chicken to onions and peppers and cook for 5 minutes.
  3. Add spices, broth, and cauliflower rice to your pot. Reduce heat to medium-low, cover, and cook for 20-30 minutes until the chicken is cooked through.
  4. Turn your soup down to low and let simmer until ready to serve.
Crockpot Instructions:
  1. Add all of the ingredients to your crockpot and stir to combine. Cook on high for 3-4 hours or on low for 6-7 hours.
Recipe Notes

*I thaw (or cook for a couple minutes) the frozen cauliflower and then pulse it in my blender for a few seconds to "rice" it. MUCH EASIER than breaking down a fresh head of cauliflower and "ricing" it. You can sub a bag of frozen riced cauliflower. It usually only comes in 12 oz bags; if you prefer not to use a partial second bag, reducing the cauliflower to 12 oz won't hurt the recipe.

Southwest Ranch Dressing (Dairy Free)

I’m pretty sure that I could drink ranch dressing like a beverage, almost. Or, at least, eat it like a soup. haha! I apologize if that grosses you out, I just love ranch. You’ve probably heard me say that before. I love it so much that the officiant of our wedding worked that into our vows. Yea, that’s how much I’m obsessed with it.

This dressing is up there with my favorite! It’s a spicy variation of it, and it is amazing! My husband loves it too. Anything that he can dip in this, HE DOES.

It goes great with chicken nuggets, chicken strips, wings, or on top of a burger. Just pour it over everything and you’ll be just fine!

I also use it for my Southwest Chopped Salad! If you love the chipotle flavors, you’ll definitely want to check this salad out!

  1. Add all ingredients to a food processor or use an immersion blender and combine until smooth.
Recipe Notes

*If you don't have Primal Kitchen Chipotle Lime mayonnaise, that's ok. Regular/homemade mayonnaise will work, you will just have to add a couple tablespoons of fresh lime juice and extra seasonings. I'd start with an extra 1/4 tsp of each: chipotle powder, garlic powder, and onion powder - then add more if you feel that you need it!

**You can sub cashew, almond, or coconut milk. Just start with 4 Tbsp and add more until desired consistency is reached.

***Unless you know that you really like the dill flavor, start with only 1/2 tsp - then add more to your liking.

Sheet Pan Flank/Skirt Steak with Roasted Veggies

Sometimes, steak can be intimidating, right? I know I used to feel that way about it sometimes. …Especially cuts like flank and skirt steaks! Don’t be afraid! If you don’t feel like getting out the grill, or if you don’t have a big cast iron skillet, (Really, if you don’t have one, get one!) this recipe is for you!

Everything gets mixed up in one big bowl, tossed on a lined sheet pan, and cooked in the oven. It doesn’t get any easier than that! You are, however, required at one point, to turn the broiler on, and  to flip the steak, but I don’t feel like that’s asking too much. 😉

Afterwards, you are left with a juicy steak and super crispy veggies! Please note, you do not have to cook the veggies for the full amount of time. We prefer them VERY crispy, so they get the full treatment!

Although this meal is quick, resting the steak outside of the oven is just as important as the quick cooking process! Do not cut short, skip, or omit that step!

Also, marinating your steak is totally optional! Life doesn’t always permit extra time to do so! 😉

  1. Optional: If you have the time, you can marinade the steak. (However, it is not necessary.) In a ziploc bag or shallow baking dish, mix together 2 extra tbsp of oil and a tsp of each of the spices listed above. Coat both sides of the steak with the marinade and let it sit for 1-2 hours in the refrigerator.
  2. Preheat oven to 450 degrees.
  3. Chop your vegetables into bite size pieces. The brussels are usually fine just cut in halves.
  4. In a large bowl, toss the chopped vegetables, oil, and seasonings (except for the steak seasonings) until everything is coated evenly.
  5. On a baking sheet lined with parchment paper, spread out the vegetables.
  6. Bake for 15 minutes - half way through, flip the vegetables.
  7. Remove the sheet from the oven and set your oven to the BROIL - High setting.
  8. Move the vegetables to the edges and position the steak in the middle of the pan.
  9. Drizzle with more olive oil and sprinkle half of each of the seasonings on each side. (If you marinated your steak, you do not have to season your steak again.)
  10. For a medium steak, broil for 6 minutes on the first side, flip and broil for another 3-4 minutes on the remaining side.*
  11. Remove the steak from the baking sheet, cover with foil, and let it rest for 10 minutes.
  12. After 10 minutes, slice the steak, against the grain, and serve with the vegetables.
  13. Top with garlic herb butter for extra flavor!

*Cook for 1 minute less for Medium-rare and 1 minute longer for Medium-well.

Pepperjack Cheese Sauce {Dairy Free}

This may have been the best thing I’ve ever made…and it couldn’t be more simple! Besides some spices, it has ONLY THREE INGREDIENTS! I’m obsessed with simple flavorful recipes and this is definitely that kind of recipe!! It has just the right amount of kick without being overpowering and is oh-so-rich and creamy – without having a bit of dairy or dairy replacement!

I’m always looking for new ways to give us our cheese fix…since we don’t eat dairy – or much of it, anyways. (My husband is lactose intolerate. You can read more in my “About Me” section of the blog!) This cheese sauce completely HITS THE SPOT!

This sauce is a clean, healthy option to swap your cheese out for, and extra nutritious if you make it with some good bone broth! There isn’t anything in here that I feel guilty about consuming! Just make sure that your cashews are raw and not roasted! If roasted is all you can find, it will still work. It will just have some added oils from the roasting process. Check the ingredients! Sometimes, raw is hard to find!

I’ve made this two nights in a row now, guys. I just can’t get enough. I already have a soup recipe in the works that uses this as well! I meant it when I said I was obsessed!

I made a southwestern-inspired hamburger helper with this and it was AMAZING! I simply mixed the sauce with a pound of ground beef and 8 oz of pasta! EASY! This sauce is delicious as a dip for tortilla chips or drizzled on top of a burger or potatoes too! I’m pretty sure I could on and on about ways to eat this! 😉 Instead, let’s just get to this recipe!

Pepperjack Cheese Sauce {Dairy Free}

  1. For this recipe, I use a high-powered blender. You can use an immersion blender or whatever blender you have! However, if yours is lacking in the power department, soak the cashews in water for 3-4 hours or overnight. It will make getting the sauce creamy, much easier!
  2. Cut the stem off of each jalapeño, remove the seeds, and slice each one in half - the long ways. ( if you're one of those, keep the seeds and add them for extra heat!) I usually use 3 large jalapeños for this. Feel free to start with two if you're worried about the heat. You can always add more!
  3. Lay each jalapeño half face down on a baking sheet and broil on high for about 5 minutes or until most of the skin has blistered. You can do this over a gas stove too. Just lay them directly on the rack above the flame! I just find that broiling is easier.
  4. To your blender, add your cashews, broth, seasonings, and roasted jalapeños. Plus some seeds if you want extra heat! Start with 1/2 tsp of salt - you can always add more later! I usually go with 1 tsp, but some don't like things very salty!
  5. Blender on high until completely smooth. This takes about about 1-3 minutes, depending on your blender.
  6. The consistency you're left with is thick and luscious - perfect for dipping If you'd like a drizzle consistency, add 1/2 cup more of broth. To use this as a pasta sauce, add 1 cup more of broth. Salt/pepper may need to be adjusted as well.

Taco Cauliflower Rice

It’s hard for me to eat plain food. I LOVE seasonings. When it comes to rice, I never really enjoyed plain white rice. However, cauliflower rice has a nice mild flavor that makes rice SO much more enjoyable for me, personally. It just needs some butter and S&P too – sorry, not sorry! 😉

I decided to take this rice to the next level. With the help of a handful of seasonings, I was able to add tons of flavor, then I piled on some steak and toppings for burrito bowls!  After making this rice, I probably could have left the steak out of the bowl and been just fine! This rice reminded me so much of taco meat! So, for vegans out there, you could totally swap this recipe in for some psuedo-ground meat on your next tacos!

Creamy Chicken Enchiladas (Gluten, Grain, and Dairy Free)

I honestly have SO MANY COMFORT FOODS! Chicken Enchiladas are one of those foods! However, this dish used to be filled with a bunch of stuff that irritated my husband’s stomach, and just wasn’t good for anyone to eat a bunch of! Therefore, I knew I HAD to convert it to Paleo…for my poor husband’s sake – it’s one of his favorite meals. I really didn’t want to live without these enchiladas either. I love the creamy filling when it mixes with the green chile sauce. You could definitely sub a red enchilada sauce in this dish too! I just prefer the lighter flavor of the green sauce with these enchiladas. I typically prefer red sauces with beef. That’s just me! You do you. 🙂

You might want to double this recipe too! They freeze wonderfully, if there is any left, that is! My husband has to practice serious self-control around these things – especially since they’re made with my Paleo Tortillas/Crepes! He actually prefers these to any other tortilla. They have a bit of an eggy flavor, compared to other tortillas, and they hold up so well, in comparison! I don’t know about you, but some brands of tortillas, just completely fall apart and tear whenever you try to roll them up! NOT COOL. These tortillas do NOT do that – I PROMISE!

Creamy Chicken Enchiladas (Gluten, Grain, and Dairy Free)

  1. Prepare 2 batches of tortillas according to recipe. See notes below.
  2. Preheat oven to 425 degrees.
  3. In a large bowl, combine all ingredients, except for the tortillas, enchilada sauce, and green onions/cilantro.
  4. To each tortilla, add 1/2 cup to the center and spread it out, vertically.
  5. Roll up each tortilla and place in a baking dish. You might have to use a couple baking dishes.
  6. Repeat steps 3 & 4 until all of the filling and tortillas are used up.
  7. Pour enchilada sauce over tortillas.
  8. Bake for 20 minutes or until the edges of the tortillas start to brown and crisp up.
  9. Sprinkle with chopped green onions and cilantro before serving!
  10. If you can tolerate some dairy, feel free to sprinkle some raw, grass fed cheddar on top or top with a dollop of sour cream!

Paleo Tortilla/Crepes

  • for the tortillas, I make them in an 8 inch non stick pan for enchiladas. Each batch makes 5-7, depending on how thick you make them.

** You can substitute almond, cashew, or coconut milk instead. If using coconut milk, try to use the creamier part of it - unless you can find "culinary coconut milk" (that's similar to Nutpods!). If using almond or cashew milk, reduce amount to 1/3 cup.

Roasted Cauliflower and Ham Soup

It isn’t much of a secret that I am obsessed with soup. Who else decides where they’re going to eat out at based on what soup they have that day? Or is that just me? 🙂

I try to turn every meal into some type of soup. (or a casserole. I have a problem.) I wasn’t sure what I was going to make when I started chopping up the cauliflower…but I have to say, it turned into something really good!

I looked over and saw a jalapeño on the counter, so that guy ended up in this pot as well! I usually get a response like, “that shouldn’t be a question, honey,” whenever I ask my husband if I should put jalapeños in something. So, if I think for a second, that I should put one in there, I usually do! If they’re not your thing, just skip that part! It doesn’t add much heat once you remove the seeds, but it gives it a nice charred pepper flavor (because I roast it!) which is delicious.

There’s just something about sitting down with a bowl of creamy soup that soothes the soul. At least that’s what soothes my soul. Again, I have an obsession with soup. How could I not, though? SOUP IS LYYFEE. Growing up, whenever you’d get sick, mom would make you soup. You’d ALWAYS feel better. There’s just something so comforting about that bowl of goodness. FYI, there’s actually some medicinal properties involved in that homemade chicken noodle soup. It heals if it’s made properly! BONE BROTHHH!!!

Alright, enough already…recipe time!

Just kidding, P.S. You may want to double this recipe if you’re cooking for more than 2 people or want leftovers.

P.P.S. You could totally make this in your Instant Pot! Follow the same directions, but once you add the milk and broth, set your IP to High Pressure and cook it for 5-8 minutes, or so. It’ll cook FAST! Once it’s finished, stir in your arrowroot slurry to thicken it up!

Roasted Cauliflower and Ham Soup

  1. Preheat oven to 500 degrees.
  2. Bake chopped cauliflower and jalapeño on a greased/lined baking sheet for 10-15 minutes or until the edges start to char.
  3. While the veggies are roasting, begin to sauté the ham, onion, and ghee in a large soup pot over medium heat.
  4. After 10 minutes or so, remove your veggies from the oven. (and turn your oven off! I'm bad about that!) Your cauliflower and jalapeño should have some good char on them. You can leave them in there a few minutes longer to get even more char. All of those charred little bits adds tons of good flavor! Whatever you like! Be sure to watch them, though. They can burn fast at this temperature!
  5. Slice your jalapeño in half, remove the seeds*, and dice.*The seeds come out SUPER easy after you've roasted it. If you prefer to do it before roasting, have at it!
  6. Add the cauliflower and jalapeño to your ham and onions.
  7. Add all of your spices to your soup pot, stir, and sauté it all for a couple minutes. I can still smell that smoky paprika cooking. Seriously, invest in that stuff. It's so good!
  8. Next, add 2 cups of your broth (set aside 1/2 cup), coconut milk, and bay leaves. Simmer for 15-30 over medium/medium low heat - the longer the better. Soup only gets better as it cooks away on the stove. I'm just impatient and need to eat it as soon as possible!
  9. Taste test! Now is the time to add more salt or pepper!
  10. After simmering for some time (or however long you can wait!), combine the remaining 1/2 cup of chicken broth and arrowroot powder to create a slurry. Add the mixture to your soup and stir* for a minute. This will begin to thicken everything up. *Make sure to stir from the bottom. Sometimes, the slurry will fall towards the bottom of the pot and thicken everything much faster down there. Then your soup will have gravy-like chunks in it. No good. ...well, gravy-like clumps don't sound all that bad to me. Remember, though, I like my gravy! Anyways, STIR IT GOOD!
  11. There you have it! Scoop yourself a bowl, top with some chopped green onions, and go get cozy! You mood will INSTANTLY improve!
