Pepperjack Cheese Sauce {Dairy Free}

This may have been the best thing I’ve ever made…and it couldn’t be more simple! Besides some spices, it has ONLY THREE INGREDIENTS! I’m obsessed with simple flavorful recipes and this is definitely that kind of recipe!! It has just the right amount of kick without being overpowering and is oh-so-rich and creamy – without having a bit of dairy or dairy replacement!

I’m always looking for new ways to give us our cheese fix…since we don’t eat dairy – or much of it, anyways. (My husband is lactose intolerate. You can read more in my “About Me” section of the blog!) This cheese sauce completely HITS THE SPOT!

This sauce is a clean, healthy option to swap your cheese out for, and extra nutritious if you make it with some good bone broth! There isn’t anything in here that I feel guilty about consuming! Just make sure that your cashews are raw and not roasted! If roasted is all you can find, it will still work. It will just have some added oils from the roasting process. Check the ingredients! Sometimes, raw is hard to find!

I’ve made this two nights in a row now, guys. I just can’t get enough. I already have a soup recipe in the works that uses this as well! I meant it when I said I was obsessed!

I made a southwestern-inspired hamburger helper with this and it was AMAZING! I simply mixed the sauce with a pound of ground beef and 8 oz of pasta! EASY! This sauce is delicious as a dip for tortilla chips or drizzled on top of a burger or potatoes too! I’m pretty sure I could on and on about ways to eat this! 😉 Instead, let’s just get to this recipe!

  1. For this recipe, I use a high-powered blender. You can use an immersion blender or whatever blender you have! However, if yours is lacking in the power department, soak the cashews in water for 3-4 hours or overnight. It will make getting the sauce creamy, much easier!
  2. Cut the stem off of each jalapeño, remove the seeds, and slice each one in half - the long ways. ( if you're one of those, keep the seeds and add them for extra heat!) I usually use 3 large jalapeños for this. Feel free to start with two if you're worried about the heat. You can always add more!
  3. Lay each jalapeño half face down on a baking sheet and broil on high for about 5 minutes or until most of the skin has blistered. You can do this over a gas stove too. Just lay them directly on the rack above the flame! I just find that broiling is easier.
  4. To your blender, add your cashews, broth, seasonings, and roasted jalapeños. Plus some seeds if you want extra heat! Start with 1/2 tsp of salt - you can always add more later! I usually go with 1 tsp, but some don't like things very salty!
  5. Blender on high until completely smooth. This takes about about 1-3 minutes, depending on your blender.
  6. The consistency you're left with is thick and luscious - perfect for dipping If you'd like a drizzle consistency, add 1/2 cup more of broth. To use this as a pasta sauce, add 1 cup more of broth. Salt/pepper may need to be adjusted as well.

Breaded Chicken Cutlets/Tenders (Gluten/Grain Free)

Chicken tenders…for kids young and old! They just never get old! These cutlets are wonderful served over creamy pasta, cauliflower rice and gravy, or make them into tenders and dip them in some good ol’ RANCH! You can’t go wrong. Totally kid-approved!

These are made with a combination of gluten free flours and spices that make the crust, crispy and flavorful! Don’t let fried chicken intimidate you. These are a great way to try it out! They’re super simple to bread and fry – you’ll impress yourself! 😉

  1. In a medium sized bowl (big enough to toss chicken pieces in), beat the egg and water. Set aside.
  2. In a shallow bowl or plate, add 1/4 cup of arrowroot powder.
  3. In a large bowl, mix together remaining ingredients (except for the chicken breasts).
  4. On a cutting board, slice each chicken breast into 2-3 thin slices. (about 1/4-1/2 inch thick) You do this by placing the chicken breast, flat on the board, and laying your hand on top. Hold your knife sideway (parallel to your hand and the board), and cut into the breast. Eyeball it and cut 1/4 inch above the cutting board, leaving a thin chicken slice. I typically can do this 1-2 more times with each breast. It just depends on the thickness.
  5. You can also make tenders, by simply cutting the breast into long chunks. Cooking times may vary with the thickness of the chicken pieces.
  6. In a large, deep cast iron skillet (you could use a good, nonstick or heavy bottom pan/pot), heat oil over medium high heat. (it should take about 4-5 minutes to heat up)
  7. Dip each piece of chicken in arrowroot powder, being sure to evenly coat all sides. Use a fork or your fingers! You might get a little messy! (It's worth it though!)
  8. Follow by dipping each piece of chicken into egg mixture.
  9. Finally, coat all sides of each piece with the seasoned flour mixture, being sure to pat the mixture onto the chicken.
  10. Gently shake off excess flour and place each chicken cutlet into hot oil. Make sure it sizzles when you place it in there. That helps to get a nice crust on the chicken! (Do not over crowd the pan. I usually fit about 3 pieces at a time.)
  11. Cook for 4-5 minutes or until the edges begin to turn golden brown and flip. You should easily be able to flip the chicken when it's done on the first side. If it sticks, do not flip, and cook for another minute or so.
  12. Cook the chicken pieces for 3-4 min on the other side. The thinner you slice the chicken, the quicker it will cook! Usually, when both sides are evenly browned, it's done.
  13. Repeat steps 7-12 until all of the chicken is cooked.
  14. I like to keep the chicken cutlets/tender warm by placing them on a baking rack on top of a baking sheet in a 250 degree oven. It keeps them nice and crispy until you're done cooking them all!
  15. Serve over pasta or rice, or with some Ranch or BBQ sauce! 🙂

  1. Preheat oven to 450 degrees.
  2. Clean and cook whole potatoes until you can easily poke with a fork or knife. However, don't cook them until they're falling apart! The second cooking will cook everything further! You can bake them for 45 minutes - 1 hour, depending on size OR microwave them for 20-25 minutes, flipping them halfway through.
  3. Once potatoes are cooked, cut in half - long ways!
  4. With a spoon, scoop out the center, but leave just a tad of potato around all of the inside. This helps keep stability. I like to push the limits here, myself. I scoop out as much potato as possible, so I can get a crispy skin!
  5. Place skins on a baking sheet face down first - almost touching each other. (I like to line mine with parchment paper for easy cleanup!). Baking them face down and closer, helps them to hold their shape and not flatten out. Spray inside and outside of each skin with olive, coconut, or avocado oil. Feel free to sprinkle some salt on the outsides too - I love it!
  6. Bake skins for 8-10 minutes, flip, and bake the other side for another 8-10 minutes or until desired crispiness is reached.
  7. While the potatoes crisping up, combine remaining ingredients with the potato you removed from the skins. If you decided to add bacon, set aside the bacon pieces for the topping, and add the bacon grease to your filling. This addition is completely optional and not necessary! However, bacon grease makes everything better!
  8. Taste your filling and adjust the salt and pepper! We like our potatoes, not only crispy, but SALTY! Therefore, I add close to 2 tsp to this recipe.
  9. Once the potato skins are finished crisping up in the oven, remove them and add filling to each. Don't be afraid to go heavy on that filling! For this recipe, each half took about a cup of filling. Use it all or save some to snack on as these finish cooking! 😉
  10. Top with bacon pieces and bake for 10 minutes or until the tops have just slightly started to brown up.
  11. Top with more chives or sour cream alternative of choice and DIG INNNNN!

  1. In a deep, sauce pan over medium heat, add 1 tsp of ghee/oil and chopped green onions. Saute for 5 minutes or until soft. Set aside to cool.
  2. In the same pan, over medium heat, add all of BBQ sauce ingredients and bring to a simmer. Cook for 5-8 minutes or until sauce has reduced slightly. Reduce the heat to low and cover while you prepare the meatballs.
  3. In a bowl, mix together the remaining meatball ingredients along with the cooled green onions.
  4. To the BBQ sauce, drop 2 tbsp size balls into the mixture until one layer has formed. It's ok if the meatballs are touching slightly, just DO NOT overcrowd the pan or try to stir them around just yet.
  5. Increase heat to medium, cover, cook for 3-5 minutes.
  6. Remove cover and shake the pan slightly. Gently flip each meatball. If you find that you do not have enough liquid in the pan, feel free to add about 3-4 tbsp of water.
  7. On top of the first layer of meatballs, add another layer of the meat mixture, in 2 tbsp size balls. Cover and cook for another 10 minutes - shaking the pan every few minutes to slightly move the meatballs around. Repeat until you have used up all of the meat.
  8. After 10 minutes, uncover the pan and gently flip the meatballs around, moving the ones from the bottom to the top. Reduce heat to low, cover, and let simmer for another 5-10 minutes or until you're ready to serve!
  9. Serve these on top of cauliflower rice or as bite-sized appetizers!

Low Carb Pizza Cups (Dairy Free)

I’d say that 99% of the population loves pizza! …including pizza-inspired dishes! These Pizza Cups will be no exception! I used italian sausage for mine and drizzled them with my Garlic Basil “Parmesan” Sauce, but feel free to use your imagination and mix in any toppings that you’d typically get on a pizza! Onions, green peppers, italian beef, pepperoni, mushrooms, bacon…the list goes on and on! Make plenty of these, they disappear quickly! They’re a perfect 2 (maybe 3) bite finger food for a party! Everyone will be grabbing these up.

The crust is made with cauliflower rice so it has much fewer carbs than the normal pizza crust one would serve. You can feel good about eating this pizza! 😉

  1. Preheat oven to 425 degrees.
  2. In a bowl, combine all of the crust ingredients until everything is mixed up well.
  3. Separate crust mixture into the openings of a greased cupcake pan. This recipe should make about 12.
  4. Press mixture down into the bottom and slightly up the sides of each cup.
  5. Bake for 10-12 minutes or until the edges start to turn golden.
  6. While the cups are baking, crumble and brown the italian sausage in a saucepan over medium heat.
  7. Once the sausage has all browned, add the remaining ingredients for the filling. Start with 1 tsp of salt and add more as desired. Feel free to add more/less fresh basil or even some oregano! The fresh herbs really add to the sauce!
  8. Remove crust cups from the oven and filling each one with about 3 tbsp of filling. If you can tolerate dairy, sprinkle some raw grass fed cheddar on top!
  9. Return cups to oven and cook for another 5-8 minutes.
  10. Remove cups from pan and DIG IN! Drizzle with my Garlic Basil "Parmesan" sauce for extra goodness!!!

Pork Fried Rice (Paleo & Whole30)

Does anyone else always want Chinese food on Mondays – the day that every Chinese restaurant is closed? Or is that just me? I just love good Chinese food…which, honestly, is RARE! Good as in tasty AND healthy! This “rice” is all of the above. Jam-packed with protein and veggies, this dish is one you can feel good about eating!

If you can find all of the prepped ingredients in your grocery store’s freezer section and have leftover ham (or have a go-to clean, natural brand of already-cooked pork), this dish comes together in MINUTES, is made in one pan, tastes so similar to take-out, AND is Whole30 approved!

Make it a complete meal by pairing it with my Instant Pot General Tso’s Chicken! That can also be Whole30 compliant and, the best part, it’s made in under 15 minutes with the help of that handy pressure cooker!

  1. In a large sauce pan, add 1 tbsp cooking fat and chopped onion and sauté over medium high heat for about 5 minutes or until onions become translucent.
  2. Once the onions have softened, add your chopped ham, riced cauliflower, and remaining fat. I like to crank the heat up and get a nice char on the meat and cauliflower - so much flavor! (that's always my favorite rice - the stuff that has some charred bits in it!)
  3. After about 3-4 minutes, add the remaining ingredients (except for the eggs), and cook until the vegetables are fork tender. This should take about 5 minutes. Note: I used all organic, frozen veggies that were already chopped and riced. HUGE TIME SAVER!
  4. Once the vegetables are cooked to your liking, add your beaten eggs. I make a divet in the pan in the middle of my rice and pour the eggs in there. Once they begin to cook, I just keep stirring everything up until they're all the way cooked. This only takes a couple minutes! No need for another pan - in my opinion! We love eggs, so I add 3 to this recipe. Feel free to add more or less!
  5. Taste now and adjust your seasonings and add more salt, coconut amines, or sesame oil. Just a bit though! You can always add more, but you can't take it out! Personally, I tend to go a bit heavier on the coconut aminos and salt. I love that soy sauce flavaaaa!
  6. Finally, stir in your chopped green onions and you're done! I like them crunchy, but feel free to cook your rice a minute or two longer after stirring them in! ENJOY!

Spinach Artichoke Dip (dairy-free and vegan)

In the past, whenever I would go out to eat, and Spinach Artichoke Dip was on the appetizer menu, I’d always order it! I loved all of that creamy, cheesy, goodness. Sometimes, I’d just make a meal out of it. However, I’d often leave the restaurant feeling overly stuffed, heavy, greasy, and just not so good. All of that cream and cheese can wreak havoc on one’s tummy – especially the dairy allergic or lactose intolerant tummies! Don’t get me wrong, the dip was always amazing…ALWAYS, but once I began paying more attention to my body and what I put into it, I really began noticing the effects food had on it. I consciously began asking myself, “Is it really worth it?” Now, I’m not saying to never order the spin-dip again. Just…maybe…try passing on it the next time, and going home and making this recipe the next day! (I know, it’s more work and definitely isn’t instantly gratifying. I promise though, it’s worth it!)

This version is packed with protein from the cashews and tons of flavor from onions and garlic – you won’t miss the cheese! (that much 😉 haha) If you’re someone that is lactose intolerant or has a dairy allergy, this is a great substitute to give you that fix!

  1. In a sauce pan, saute onions in butter for 5 minutes or until they've become translucent and started browning.
  2. While the onions are cooking, drain water off soaked cashews. In a food processor or high powered blender, combine cashews, broth, and coconut milk. Blend until the mixture has lightened and is very creamy. If the mixture is too thick to blend, add a couple tablespoons more of broth until it begins to blend completely.
  3. If your spinach is frozen, follow the cooking directions until it has thawed enough to squeeze the moisture out. You want VERY LITTLE moisture left. If your spinach is thawed, simply wring out the liquid using cheesecloth. You will be surprised with how little spinach you're left with!
  4. Once you've completely pureed the cashews, add the mixture, drained spinach, and remaining ingredients to the cooked onions. Cook the dip over medium low heat for about 10 minutes.
  5. Taste and adjust the seasonings! If you want a cheesier flavor, you can add more nutritional yeast. If you want more garlic, (I ALWAYS WANT MORE GARLIC) add more chopped garlic or some garlic powder. I've found that when I add more nutritional yeast, I also have to add more salt amount as well. Use your own discretion! 🙂
  6. Serve hot with tortilla (I like Siete brand chips! They're grain free and made with minimal ingredients!) or try some plantain chips! YUM! Leftovers of this don't go to waste either. It's delicious when mixed with shredded chicken and cauliflower rice!

Jalapeño Crema

It’s no secret that our house loves spicy things, and particularly jalapeños. You’ll find that I often suggest adding them to things in my recipes. If I didn’t suggest adding them, chances are, I still put them in there when I make the dish. Believe it or not, not everyone likes them as much as my husband does. 😉

This sauce is a MUST-HAVE whenever we have anything of the Mexican cuisine. Plus, it comes together in just a few minutes! If there’s any leftovers, it’s pretty easy to find something to pour this over the next few days.

  1. With the exception of the coconut milk LIQUID, add all of your ingredients to a food processor and blend! Start with 1 tsp of salt...you can always add more.
  2. Add more coconut milk liquid until your desired consistency is achieved. If you can tolerate some dairy or have a favorite unsweetened yogurt, you can add some of that to it as well to make a thicker sauce.
  3. Now, go and pour this over EVERYTHING.

Quick Instant Pot Chicken Taco “Pasta”

I’m always amazed at how evenly and quickly my Instant Pot cooks meals. It is one gadget that I seriously can’t say enough good things about! It’s been a year with my IP, I should just get used to it…


If you don’t have an IP, you could still cook this on your stove top. Just bake your spaghetti squash separately (it’ll probably take at least 30-40 min, depending on the size) or microwave it , for a quicker cook…then add it to your chicken taco sauce. Still easy, it will just take a bit more time and you’ll have to keep an eye on that pot. That’s probably my favorite part of the Instant Pot, I can set it and not pay any attention to it until the timer goes off and it’s basically ready! I can’t complain about that aspect a bit!

This “pasta” is made with spaghetti squash – so it’s totally guilt-free! If you’re a taco lover, this is a nice change from your typical tortillas, meat, and veggies. I use my jalapeño crema on top of this too! Love the bright, spiciness it adds!

Quick Instant Pot Chicken Taco "Pasta"

  1. To your Instant Pot, add your onions, chicken, seasonings, coconut milk*, tomato sauce, and lime juice. *(if you don't have coconut milk, use 1 1/2 cups of whatever milk you want!)
  2. Wash and cut spaghetti squash in half - I do it the short ways, around the middle section - so you're left with two "cups."
  3. Line the pot with a double layer of tinfoil. You can use your trivet, if it fits. For the spaghetti squash I used, the handles of the trivet wouldn't allow the lid to close. If you can fit it all in there with the trivet, by all means, use it. It'd work the same.
  4. Place your halved squash on top of the tinfoil layer. Close the lid, seal the valve, press the "Manual" button*, then press the "+" button until the screen reads 8. The pot will switch to "On" while it preheats. *Make sure it's on High Pressure (if it is on Low Pressure, just press the "pressure" button to get it to High)
  5. Your pot will take about 15 minutes to come to pressure. If you want to speed this up, you could sauté the onions and chicken for a few minutes before adding the other ingredients. For me, this cuts the preheat time in half or more, also you could reduce the cooking time as well. However, then you have to stir and watch the pot more than before. So, do whatever YOU feel like doing. Experiment! When it comes to such a quick cooking time, if something isn't done enough to your liking, it's easy to add a couple extra minutes!
  6. When the timer goes off, do a QR (quick release), and open the lid. Remove your squash and divider.
  7. Make a slurry with the arrowroot powder and almond milk or water and add that to your sauce and stir. Your sauce should thicken in seconds. Personally, we like our pasta saucyyyy. If you want a thicken sauce, you can always make more slurry and add it. Once it's thickened, turn the pot off by pressing "Keep Warm/Cancel."
  8. Remove the inside of your squash, shred, and squeeze excess water out of it. If you don't do this, you will have a VERY saucy pasta - not necessarily bad - but definitely on the "wet" side.
  9. Add your squash to your pot and stir. Serve it up!

Sweet Potato Soufflé with Bacon Crumble

Any casserole-type dish, I pretty much love. This one has a fancy name though 😉 AND it has bacon in it, so….that’s reason enough to try this out. PLUS you can say you made a soufflé and sound all fancy! Ha! It’s so easy to make – always a plus.

This dish has been something I brought to family dinners for years. However, it’s only recently been paleo-fied and doesn’t taste a bit healthy! It’s not filled with tons of brown sugar or marshmallows, and the eggs make the texture AMAZINGGG. I love sweet potatoes, but their texture can be somewhat dense and just. gets. old. This soufflé is like scoops of sweet pillows with bacon on top. Is there anything better?

  1. Peel and cook the sweet potatoes. I used my Instant Pot. I peeled them, chopped them into 1 1/2"-2" chunks, added 1 cup of water and cooked them for about 8 minutes. BOOM.
  2. Once your sweet potatoes are cooked, combine them with the remaining ingredients with the exception of the crumble ingredients. You should get a light orange, somewhat runny consistency.
  3. To make the crumble, combine your flour, butter, sugar, and bacon. USE COLD BUTTER. The crumble consistency will change if you use melted or room temperature. It will still taste delicious, it just won't be as crumbly. 🙂 It takes a few extra minutes to combine it all, but it's worth it!
  4. Pour your sweet potato mixture into a deep baking dish. I used one that was about 4" deep. If you use a more shallow one, it will change the consistency a bit and cook quicker.
  5. Top with your crumble and bake for 35-40 minutes until it's deep brown.
  6. ...that topping, though. **drools** Let the soufflé rest for a good 20 minutes. If you don't it will fall apart slightly when you serve it. Again, it'll still be delicious...just not as pretty. 🙂 ENJOY!!
